That belief comes from the work I’ve done since 1998: the history I’ve read, the chemistry I’ve followed, the laboratory testing behind the coffee, the practitioners I’ve known, and thousands of conversations with people who told me the practice helped them.
The research is incomplete. The experience behind my position is substantial. This book holds both facts at once.

It started with forty pounds of coffee and a woman who wasn’t going to drink it.
In late 1997, a customer at The Big Carrot in Toronto made an unusual order. Scott tried to talk her out of buying so much. Her reply changed the direction of his life.
